WIAW: Sick Baby Day

Poor BaileyBug had a sick week last week. Luckily, she's back to her normal, go-go-go, smiley self now. However, last week was not pretty. There were days when she wouldn't let me put her down long enough to pee without crying. Fun times, let me tell you. Anyway, below are my eats from last Wednesday, one of B's sick days. She napped OK, which helped me get OK meals, but I also didn't have a TON of time because I never knew when she was going to wake up or need to be held. Poor girl! Broke my heart!! Anyway-- let's do this, WIAW. 


 
Breakfast:   
Tuesday night after B went to bed I made pumpkin spice muffins for a Mom's Club event the next morning. Sadly, we never made it to the event because B was diagnosed with HFM and was contagious still. Poor me-- I had to eat the muffins myself. Don't be fooled by the pic-- I ate 2 more after that 1. Yuuuum. With a big, giant side of coffee.
 
 
Snack:
Several handfuls of these. Healthiest choice? Nope. So did not matter.
 
 
Lunch:
 Luckily, Bailey took a good afternoon nap, so I had time to make SUCH A GOOD (& quick!) LUNCH!! Grilled deli turkey and cheese sandwich on one of those healthy wrap things. Pretzel sticks and grapes and an unpictured Diet Pepsi. So good.
 
 
Dinner:
The Hubs had to work late and B was incredibly clingy. I had ZERO time to cook anything before the Hubs got home, so I fed B some leftovers and called it good. However, earlier that day I took some local bison meat (that I bought after touring the same farm that bison was raised at on a Mom's Club tour with B-- so fun!!) that was in the freezer out to thaw and I chopped up 2 sweet potatoes. Thank goodness for planning ahead! The Hubs got home just before B went to bed, so I tossed the sweet potatoes in some extra virgin olive oil & salt and pepper and threw them in the oven at 400* and formed the bison burgers while he was playing with her. Then, I nursed B while the Hubs grilled the burgers on the George Foreman. When I finished, the fries and burgers were done and we ended up having a really great (though late) dinner.
 
 
Dessert:
SO MANY spoonful's of this ice cream. Seriously, so good.

Breakfast:
Toast with butter and jelly, cantaloupe, coffee
 

Snack: Unpictured pretzels
 

Lunch:
 
2-egg omlette with low-fat mozzarella cheese, pretzels, and a diet pepsi

 
Dinner:
Turned this--

 Spicy sriracha zucchini and shrimp (from this recipe). YUM.

WIAW

Without any further ado, let's just get right to it...
 
 
Breakfast @ 7am
Coffee with creamer and truvia, cinnamon raisin toast with spray butter (so healthy) and a leftover cookie 


Snack @ 10am
2 bites of this KIND bar.... it was an impulse purchase and I did not like it.  
 
 
Lunch @ 2pm
2 egg omelet with low-fat mozzarella cheese and avocado chunks (leftover from Bailey's lunch, thankyouverymuch), cantaloupe and a Diet Pepsi
 
 
Dinner @ 6pm
Avocado Chicken Burger (using this recipe) and green beans and a big glass of ice water
 
 
Dessert @ 8pm
 
Chocolate covered vanilla ice cream pop



Oh, and there was some (unpictured) air-popped popcorn at some point in the evening after dinner, too.

WIAW: SAHMing It




You guessed it! It's been a while, so I figured it was time for another fun round of WIAW!!

Breakfast: 7am
 
 
Coffee (duh) with creamer and stevia, cinnamon raisin English muffin and a side of watermelon. OK, more than a side. Like, a fourth of a watermelon.
 
Oh, and in case you were wondering, Bailey had watermelon and zucchini. Breakfast of baby champions.
 
 
 
Snack: 10am:  
 
Hunger hit again pretty quickly after breakfast, so I snacked on a Kashi bar. And an pictured Diet Pepsi. Yep. Diet Pepsi at 10am. I'm awesome. 
 
 
Lunch: 2pm
I don't eat lunch until I put Bailey down for her afternoon nap, so thank goodness for that morning snack! Lunch was a 1-egg + 2-egg white omelette with low-fat mozzarella cheese and lots and lots and lots of chips and salsa. A BIG perk of being home is that I can MAKE a lunch and not have to have it be something pack-able. LOVE eggs for lunch! 
 
 
Snack: 4pm
Unpictured pretzels and peanut butter. I could eat this snack everyday. Who am I kidding-- I do eat this snack everyday. Mmmmm.... PEANUT BUTTER.
 
 
 Dinner: 6pm
Pioneer Woman's Lasagna Roll-Ups with a side of green beans and a flavored water. YUM.
 
 
 
Then I stopped taking pictures, but better believe there was ice cream later that night. Duh.

WIAW - Moving Edition

 
 
Time for another fun round of WIAW!!

 The last few days have been quite interesting on the food front, as we're mid-move. Our fridge and pantry look like this:



Yes. You see right. We have beer, eggs, brown rice, 1 tortilla, a can of soup, PB2 and lots of condiments. Clearly the ingredients to a great meal right there.
 
So, I've been eating mainly out of the freezer. For one, most of our kitchen is packed up so I have very limited means to actually COOK and for two, it's easier to eat stuff than move stuff. Obviously.
 
So, let's get to it... WIAW - Moving Edition...

 
Breakfast:
 
Cinnamon raisin toast and coffee. Bailey has decided lately that she is WAY TOO COOL for sleep so that means lots and lots and looooots of coffee for me.
 
 
 
Lunch:


 
 Frozen meal FTW. This was actually an impulse buy at Target and turned out pretty good. It was super flavorful, which is usually not the case for frozen meals.
 
 
Dinner:
 
Eaten WAY too late, as Bailey was just NOT having the whole go-to-sleep thing. I was BEYOND famished and scarfed this thing down in about 2 bites. Oh, and that beer-- 2 words: MUCH NEEDED.
 
 
Snack (throughout the day): 
 
Lots and lots and lots of handfuls of this trail mix. Too many handfuls to count. An embaressingly high number of handfuls. We'll just leave it at that. This stuff is DANGEROUS. Dangerous and DELICIOUS.  
 
 
 
Clearly a VERY healthy day... but, hey- it could have been WAY worse. It is what it is the next few weeks. Moving is just so hectic and crazy and life is even crazier right now and I have zero energy to waste worrying about food. Hopefully my body doesn't start to revolt at the lack of fresh, quality food. We'll see!

WIAW: Salad and Cookies!

Another week down! I, for one, am SO happy the week is half over. It's been a LONG week and I am so ready for the weekend.

Ok... without any more chit-chat, let's get to WIAW. Below are the eats from Tuesday, 7/30.

Breakfast:
The usual-- Greek yogurt, cereal, and water. Never gets old.
 
 
Lunch: 
Salad (cucumbers, cheese, and tortilla strips w/ dressing on the side), low-fat string cheese, apple, and carrots with water to drink. Look at me being all healthy. Remember that in about 2 seconds...
 
 
Snack:
COOKIE!!! Ok, ok-- cookieS is more accurate. 3 cookies, to be exact. Sorry I'm not sorry.
 
 
Dinner:
The Hubs and I made pasta Sunday night and it was DELICIOUS. Cook pancetta in some EVOO with garlic and red pepper flakes. Add to cooked pasta with a little chicken broth. YUUUUM. And, yes. Yes I did eat ALL of that. Every last bite. Delicious.
 
 
Dessert:

Nothing better than ending the night with several spoonfuls of ice cream. :)

WIAW... a week late

Am I the only one that thinks this Wednesday feels MUCH more like it should be a Friday? Why is this week moving sooooo slowly??? Rough life, I know.
 
Anyway-- it's WEDNESDAY! That means we've made it half way through the week! It also means it's What I Ate Wednesday...
 
 

I took all the pics LAST week and then just never got around to actually typing up the post. So, this is kinda a WIA(last)W. Whoops! Better a week late than never, right?? :) Let's get to it...

Breakfast: 8:30am
It's a little earlier than usual. This whole growing a baby thing has made me hungrier than usual-- I know, I didn't think it was possible either! I'm trying to eat by 8:30 or so to avoid total hangry melt down level.

The usual. And, pictureless at that. I mean-- you know what a Greek yogurt, a few handfuls of knock-off (no shame!) Special K cereal, and water look like. Excellent.

Moving on...


Snack 1: 11am
Again... to avoid a hangry situation, I've been trying to eat a little more regularly, even if I don't feel that OMG-I'm-starving level of hunger. So far, it's been working pretty well!

1 piece of whole wheat bread, toasted, with crunchy PB (and, no, not the all-natural kind. The JIFF knock-off-sooooo-good kind) with honey. Yum! Oh, and-- that coffee cup has been empty and on my desk for weeks. Whoops.


Lunch: 1:30pm
 
When I picked up the Hubs from Chicago like forever ago, I (of course) made a Trader Joe's stop. I love, love, LOVE this Egg White Salad from TJ's. SO good. And, the entire container is super low cal, but high protein. LOVE. So, I had 1/2 the container on a piece of whole wheat toast with grapes.


Snack 2: 4pm
Again in the spirit of eating smaller meals, more frequently I had another snack towards the end of the day. These lil mini Luna bars have been sitting in my desk forever, but work wonders for a quick, easy snack. Stats are pretty good too-- 70 calories and 4g of protein-- plus, they're yummy! 


Dinner: 6:30pm
I made a this ginormous lasagna forever ago and the Hubs and I slowly made our way through it for like a week solid. It was DAMN good, though. Lasagna makes the best left overs, too! We paired it with corn (straight from the can!) and a piece of homemade garlic bread (put piece of bread under broiler, when it's just the right level of toasted pull it out then rub a piece of garlic right on it... perfection). Yuuuuum.


Dessert: 8pm
Unpictured low-fat ice cream.

I mean... everyday should end with ice cream. Every. Day.
