Another WIAW

What I Ate Wednesday Healthy Holiday Recipes



Without a big intro, here's this weeks What I Ate Wednesday (WIAW).

(What is WIAW? Go to Jen's website and let her tell you all about it. It's basically just a fun way to show a day-in-the-life via food. So, let's get to it!)

Like last week, before work I went to the gym for a 5:30am 60-minute spinning class. I never eat before going to the gym or working out, unless it's the weekend and it's a pre-planned long run (over 10 miles). My tummy just doesn't agree with food first thing and I'm just not hungry quite yet. I do drink loads of (unpictured) water during and after the workout.


Breakfast: 8am

COFFEE, COFFEE, COFFEE!!! Btw, this creamer is AMAZING. So, so, soooo good. If you haven't tried it yet, I'd highly encourage it. The world's healthiest? I mean... no, but SOOOO good.

And, yes-- this is all I had for breakfast. I got busy and never quite made it to the fridge for my Greek yogurt. Bad, Meagan, I know.


Lunch:  1pm
1/2 the container of this egg white salad from Trader Joe's (SOOOOO GOOOOOD!!!) on a (unpictured) piece of the homemade bread I made this weekend. YUM!!! Apple on the side. I actually didn't have that cutie til about 3pm. Man, I love cuties. SO good.
 
 
 Dinner:  6pm
A quick at-home kinda half-assed version of Pad-Thai (w/ 4 TJ's mini chicken wontons on the side). Basically, I make rice noodles and while those are cooking I scramble 2 egg whites. Add noodles to egg whites. Season w/ LOTS of Siracha, soy sauce, and TJ's peanut salad dressing. Dinner was made in like 10 minutes. Delicious! Not the most nutritious, as it has no veggies... but, it does have a little protein thanks to the eggs! Usually I add peppers and onions, but I was hungry and didn't want to take the time to chop them. Lazy and hungry trumps healthy sometimes. It happens.
 
Snack:  7:15pm
Almonds and chocolate chips. Honestly, I had no reason to have this. I was full from dinner, but BORED watching TV. Stupid. But, at least it wasn't like straight lard or something, I suppose.


Dessert:  8pm
The Hubs and his dad went to dinner and then picked me up to help my FIL pick up some new running shoes (he got some great New Balance's!!) and then he insisted on fro yo! Really! He did!! I got a small one (even though the pic might not look like it) with vanilla fro yo with reese pb cups and oreo. YUUUUM.

  1. Boo - my comment disappeared! Okay, I mentioned how you have burned off all of your tastebuds so ppl you should mention this considering the Siracha! ;) And I really enjoyed the mental image of you eating straight lard!
